Poised to open in D.C.’s Mt. Vernon Triangle is restaurateur Hakan Ilhan’s latest project, Alba Osteria. The neighborhood eatery will offer a contemporary take on classical Italian fare, with a heavy focus on Italy’s Piedmont region.

The interior is a dynamic space with various nooks and crannies to match a wide array of dining preferences and desired levels of interaction. In the center of the restaurant, a four-sided island bar will allow patrons the opportunity to enjoy happy hour drink specials, along with the full menu or bar bites. Shelves of vertically displayed wines partition off a private room, which will also host wine education classes. A chef-focused exhibition counter, complete with a gleaming, Ferrari-red meat slicer, could be the perfect spot to munch on some salumi and formaggi with a great view into the semi-open kitchen. And for the truest of foodies, a circular pizza bar will provide a space to sit and watch as the wood-fired dome oven churns out mouthwatering Neapolitan pizzas every 90 seconds. The oven is the kitchen’s beautiful centerpiece. It’s also certified by the Associazione Vera Pizza Napoletana, an organization that strives to maintain the standard for authentic Neapolitan pizzas by establishing guidelines for Italian restaurants around the world.

At the helm of the kitchen is James Beard Award winning Chef Roberto Donna, formerly of D.C.’s Galileo (which closed amidst some controversy), once named one of the “10 Best Italian Restaurants in America” by Wine Spectator and one of the 20 finest Italian restaurants outside of Italy by the President of Italy. Donna believes that there is no such thing as a unified “Italian cuisine.” Instead, there are many distinct cuisines within Italy unique to each region. “If you asked my grandmother from Piedmont what they’re cooking over in Bologna, she would not know or care, really. People tend to eat the traditional dishes of their own region,” Donna said in an interview.

At Galileo, Donna experimented with featuring the culinary traditions of different regions of Italy. Via his restaurant, he educated his D.C. clientele about the diversity of Italian cooking back in a time when there wasn’t too much authentic regional Italian cuisine available in the city. At Alba Osteria, he has decided to return to his Piemontese roots and to showcase the food he grew up eating. What does this mean for future restaurant patrons? Seafood will not be featured heavily on the a la carte; fish dishes will only appear as specials. Why? Because Piemontese cuisine doesn’t rely much on seafood and it would be dishonest to offer it as a traditional part of the cuisine. Instead, there will be many vegetable dishes on the menu, as the fertile Po valley is particularly known for its produce. The house-made Gnocchi Verdi (spinach-potato gnocchis) will be airy light and melt on the tongue. Meat dishes will feature beef tenderloin, veal cutlet and rabbit, as well as the less conservative Batsoa (fried pigs feet), Busecca (tripe), and Lingua al Verde (veal tongue in a green sauce). Guests also will have the option of adding some duck liver onto any dish for an additional price, because – well – why not?

Just as the dish titles appear in Italian and maintain a sense of authenticity, the portion sizes as Alba Osteria also will reflect Italian eating culture. Daily specials will appear in “Italian sized” portions, which translates to somewhere between a small plate and an American entrée portion. A variety of fresh, house-made pastas will be served in either the former or an American “regular” size.

As wine plays a fundamental role in Piemontese culinary tradition, it also will be an integral part of the experience at Alba Osteria. The restaurant will house a boutique selection of Italian labels along with some local varieties and will have four wines on draft. A plan for wine pairing dinners and tastings is also in the works.

Alba Osteria will officially open to the public on Dec. 30, just in time to ring in 2014 with some Piemontese flare.

The MICHELIN Guide Italy 2021 unveiled

Michelin is pleased to unveil its new edition of the MICHELIN Guide Italy 2021 during the 66th edition. This occasion also marked the debut of a new distinction – the MICHELIN Green Star – awarded to chefs who promote sustainable cooking.

The 29 new additions, across 13 Italian regions, comprise 3 Three Stars and 26 One Stars, making a total of 371 Starred restaurants. All 11 existing Three Star establishments have retained their status.

The live-streamed event was hosted by Petra Loreggian alongside Michelin Ambassador Federica Pellegrini, who announced the names of the 13 chefs who have been awarded the MICHELIN Green Star. Containing the 2021 Michelin Guide, the Michelin Ristoranti app for iOS will be available for free from today. The Guide’s paper edition will be available in bookshops from November 26.

Three new venues are awarded Two Stars, bringing the total number of Michelin Two Stars restaurants to 37:

It is said that Campanians are born to cook and that chefs from the region can produce food of the very highest quality wherever they find themselves. Rocco De Santis is no exception. His exquisite cuisine has taken Florence by storm with an explosion of color and imagination.

There are 26 new One Star restaurants in this year’s selection, taking the total to 323. Among the new starred, 16 restaurants represent the young guard of Italian gastronomy since they are run by young chefs under 35 and sometimes under 30 years old.

Learn to Make Osteria Via Stato’s Fresh Cavatelli with Wild Mushrooms

It’s one of the most comforting and savory pasta dishes you’ve ever tried and we are sharing the recipe! Osteria Via Stato’s Executive Chef David Gregorio is teaching us how to make Cavatelli with Wild Mushrooms.

Recipe: Fresh Cavatelli with Wild Mushrooms

INGREDIENTS:
4 cups Fresh Cavatelli (store bought)
1 cup Seasonal Mushrooms, sautéed
2 tbsp Butter
12 oz Parmesan Broth
1 tbsp Basil leaves, torn
1 tbsp Parsley leaves, torn
1/2 tsp minced Garlic
2 tbsp Grated Parmesan
1/2 tbsp Olive Oil

PARMESAN BROTH INGREDIENTS:
1 quart Chicken Stock
1 piece of Parmesan Rinds, about 4 oz
Freshly ground black pepper to taste
Salt to taste

PARMESAN BROTH METHOD:
1. Simmer chicken stock with parmesan rind, on very low heat for approximately 45 minutes.
2. Season with salt and pepper.

METHOD:
1. Heat about ½ tablespoon of olive oil on high in a pan and sautéed the mushrooms for 2 minutes. Season with salt and black pepper.
2. Add a tablespoon of butter to the pan and continue sautéing until all water evaporates and mushrooms start to brown. Drain off excess oil.
3. Boil fresh cavatelli in rolling boiling water for approximately 4.5 minutes, until cavatelli floats to the top of the water surface (or follow packet instructions)
4. Melt 1 tbsp of butter in a pan (large enough to fit the cavatelli in a single layer) over high heat.
5. When butter begins to foam, add the cavatelli without overcrowding the pan.
6. Toss cavatelli, allowing it to brown nicely. Approximately 3 – 5 minutes. Add in minced garlic and allow it to cook briefly.
7. Add mushrooms, toss in well. Add parmesan broth, bring back to simmer.
8. Add ½ tbsp of parmesan and herbs. Cook together briefly. Approximately 2 – 3 minutes.
9. Plate and sprinkle with remaining parmesan.


D.C.-area restaurants offering special menus, events for the holidays

T his month, Sababa (3311 Connecticut Ave. NW) will celebrate Hanukkah, the Festival of Lights, with a special three-course, prix fixe feast priced at $45 per person, available Dec. 22-23 and 26-29. On Christmas Eve, Sababa will offer a variety of Chinese-inspired specials served from 5 to 10 p.m.

On Saturday, City Tap House Penn Quarter (901 Ninth St. NW) hosts a holiday-themed trivia brunch with Port City Brewing Co. from 11 a.m. to 3 p.m. Santa will make an appearance. The winning team will receive tickets to Enchant Christmas maze and market at Nationals Park. On Christmas Eve, an ugly sweater contest takes place during brunch at Penn Quarter and at City Tap House Dupont (1250 Connecticut Ave. NW). The winner will receive a City Tap gift card.

On New Year&rsquos Eve, City Tap House Penn Quarter will host an astrology-themed party with surf-and-turf specials and a late-night DJ from 9 p.m. to midnight. On New Year&rsquos Day, City Tap House Penn Quarter will host a bottomless brunch for $10, and City Tap House Dupont will host a drag bottomless brunch for $18.

Buena Vida Clarendon (2900 Wilson Blvd., Suite 103, Arlington) offers a special dinner menu showcasing the best dishes of Mexico City on New Year&rsquos Eve. Buena Vida Silver Spring (8407 Ramsey Ave., Silver Spring) will serve special $59 or $79 dinner menus showcasing dishes from all corners of Mexico on New Year&rsquos Eve.

Mintwood Place (1813 Columbia Rd. NW) is featuring a holiday cookie platter and mug of hot chocolate throughout December there&rsquos a boozy version too.

Contemporary American dishes with French flavors will be on the three-course menu, priced at $95 per person, on Christmas Eve at 2941 Restaurant (2941 Fairview Park Dr., Falls Church). Dishes such as truffled roast chicken, foie gras mousse, and sweet crab and citrus are among the offerings. A three-course $125 menu will be served from 4 to 10 p.m. on New Year&rsquos Eve.

Legal Sea Foods &rsquo holiday specials vary depending on the location (704 Seventh St. NW Ronald Reagan Washington National Airport, 2401 S. Smith Blvd., Arlington 320 23rd St. S., Arlington). On Christmas Eve and Christmas Day, the restaurants are offering a gift card promotion available through the end of the year: For every $200 purchased in gift cards, customers will receive a voucher for a free lobster dinner for use from Jan. 2 through March 31.

The traditional Italian Feast of Seven Fishes will be served at Lupo Verde (1401 T St. NW) and Lupo Verde Osteria (4814 MacArthur Blvd. NW) from 5 to 11 p.m. on Christmas Eve, priced at $95. The meal follows the Roman Catholic tradition of refraining from eating meat on holy days. A traditional Italian five-course dinner, priced at $120, will be served at Lupo Verde on New Year&rsquos Eve.

Modena (1100 New York Ave. NW) also follows Italian traditions with its $65 prix fixe menu on Christmas Eve, incorporating truffles, hazelnuts, lentils and ricotta into its dishes. The New Year&rsquos Eve four-course menu will be available at $90 per person.

At Cuba Libre Restaurant & Rum Bar (801 Ninth St. NW) reservations made before 6:30 p.m. for the restaurant&rsquos Cuban New Year&rsquos Eve dinner will receive a $25 gift card to be used during a future visit. A five-course, prix fixe menu is priced at $119 and includes a Champagne toast, DJ and dancing, party hats and noise makers for the midnight celebration.

Sandbox is a special events venue in Georgetown, located at 3251 Prospect St. NW in the courtyard behind Café Milano and Brasserie Liberte. It will serve as a jazz club featuring live performances Friday and Saturdays in December from 6:30 to 9:30 p.m. For reservations, call (202) 298-7887.

All-you-can-eat roasted pig, chicken leg and thigh, black-eyed peas, macaroni and cheese, cole slaw, green beans and cornbread are on the menu at The Dish & Dram (10301 Kensington Parkway, Kensington) from 3 to 8 p.m. on New Year&rsquos Day. The restaurant&rsquos pig roast is priced at $35 for adults and $15 for children, 12 and under.

As a partner in the Make-A-Wish Mid-Atlantic program, Silver New American Brasserie is sponsoring dinner fundraisers and guest bartender events planned as follows: Friday and Dec. 18 at Silver Cathedral Commons (3404 Wisconsin Ave. NW) and Dec. 26 at Silver Bethesda (7150 Woodmont Ave., Bethesda).

Celebrate New Year&rsquos Eve at The Alex Craft Cocktail Cellar & Speakeasy in The Graham Georgetown (1075 Thomas Jefferson St. NW) with a live performance from Blue Dot Jazz Troupe, a full open bar, midnight toast and shareable small plates. On New Year&rsquos Day, there&rsquos a hangover brunch at The Speakeasy with $1 mimosas with the purchase of an entrée.

Dining Destination MGM National Harbor Opens in Washington, D.C.

On Dec. 8, the MGM National Harbor opened its doors. Located just outside Washington, D.C., on the Maryland side of the Potomac River, the resort is home to a casino, floral conservatory, spa, shopping center, two nightlife concepts and a 3,000-seat performance venue, as well as restaurants from acclaimed chefs José Andrés, Marcus Samuelsson and Bryan and Michael Voltaggio. In addition to the fine-dining concepts, the resort also offers a sports bar, pastry shop, pan-Asian restaurant and food market containing several fast-casual spots.

In addition to the surrounding D.C. dining scene, wine lovers have plenty to choose from within the resort itself. Andrés’ restaurant, Fish, is open for dinner daily emphasizing locally sourced seafood, the menu includes Maryland blue crab and oysters from the Rappahannock River, while the wine list focuses on high-acid whites and low-tannin reds, with a core of Spanish bottles and a handful of choices from Virginia. Andrés’ diverse group of restaurants includes 16 current Wine Spectator Restaurant Award winners, managed by wine director Andy Myers. Marcus Samuelsson’s American restaurant, Marcus, also offers an extensive international wine list, including over 30 options by the glass. The list at Voltaggio Brothers Steak House numbers 25 pages and includes plenty in the way of Burgundy and Bordeaux, California Cabernet and Champagne.

Chef’s Table at Brooklyn Fare Moves to Manhattan

Renowned 3 Michelin-starred dining destination Chef’s Table at Brooklyn Fare is no longer in Brooklyn. Earlier this month, the establishment moved from its original location at 200 Schermerhorn St. in the Boerum Hill neighborhood to 431 W. 37th St. in Manhattan. The restaurant is known for its two-and-a-half-hour seasonal tasting menu from chef César Ramirez, which is enjoyed at the intimate namesake communal table, as well as its 400-selection wine list. Curated by wine director Christine Collado and offering strengths in Champagne, Burgundy, the Rhône, Germany and Austria, the program has earned a Best of Award of Excellence since 2015.

Joël Robuchon Comes to Montréal

Earlier this month, at the Casino de Montréal in the city’s Ville-Marie borough, L’Atelier Joël Robuchon Montréal opened its doors. The restaurant is open for dinner seven nights a week. Robuchon’s restaurants are known for producing expansive, high-quality wine lists, and include three Grand Award winners: L’Atelier de Joël Robuchon in Hong Kong, Robuchon au Dôme in Macau and Joël Robuchon Restaurant in Las Vegas.

Charlie Palmer Steak Relocates in New York

In January 2017, Charlie Palmer Steak will open in Midtown Manhattan’s Archer Hotel at 45 W. 38th St., relocating from its previous location at 5 E. 54th St. The restaurant will take the place of Best of Award of Excellence winner David Burke Fabrick. Palmer’s steakhouses have maintained a longstanding emphasis on quality wine lists four locations of Charlie Palmer Steak across the country currently boast Restaurant Awards, and his Aureole Las Vegas has earned a Grand Award since 2000. The New York location has earned a Best of Award of Excellence since 2015, and offers a substantial selection of wines from California, Italy, Bordeaux and the rest of France.

Publican Anker Opens in Chicago

Earlier this month, the team at One Off Hospitality Group opened Publican Anker in Chicago’s Wicker Park neighborhood, at 1576 N. Milwaukee Ave. The restaurant is open for light bites and dinner daily. James Beard Award–winning executive chef and partner Paul Kahan also co-owns Award of Excellence winner Blackbird in the West Loop. His seasonal menu at Publican Anker focuses on seafood and vegetables and includes eclectic dishes such as swordfish sausage, green chile fish stew and a persimmon salad with red quinoa and labneh. The wine list is managed by Bret Heiar, who also oversees the program at Award of Excellence winner Nico Osteria. Emphasizing French bottles, the list spans nearly 100 selections, 16 of which are offered by the glass.

Pre-heat oven to 425 degrees.

Cut a large piece of parchment paper into a heart shape—unroll about 14 inches of paper, fold in half, and cut half of a heart shape. Set aside.

Cut the zucchini, yellow squash, and tomato into ½ -inch slices.

Open the paper on a cutting board and shingle the squash, zucchini, and tomato near the top right-hand curve of the heart, leaving at least a 1-inch border from the edge of the paper. Lightly season the vegetables with salt and pepper. Place the fish on top of the vegetables and season again. Place the olives, capers, scallion, and 2-3 thin slices of lemon on the fish. Add the olive oil, white wine, and ice cubes. Top the fish with thyme sprig and begin to seal the paper heart by folding in half and making small folds all the way around the edges, crimping the paper to create a sealed packet. Make sure there are no gaps. Place packet on a sheet pan and bake for 10-12 minutes.

Remove packet from the sheet pan with a large spatula and carefully transfer onto a plate. Tear the paper at the top, making sure your hands stay clear of the escaping steam. Season to taste with salt and pepper.
