How are pumpkins chosen and prepared?

The local pumpkins are found in abundance from May to September-October. But in the supermarket you can find imported pumpkins all year round. Unfortunately, these vegetables can be contaminated with pesticides, so it is recommended to choose organic pumpkins. It is also good to always remove the pumpkin peel before cooking.

Try, as much as possible, to choose small pumpkins with a shiny, beautifully colored skin. Large, colorless pumpkins with wrinkled or spotted skin should be avoided.

Wash the zucchini very well, remove the heads, peel them, cut them into quarters and remove the core. Even if the pumpkins are young and do not yet have seeds, their core should not be included in baby foods. Zucchini can be boiled, steamed or baked.

Mushroom and pumpkin soup. This recipe will diversify your daily menu. It is prepared very simply and quickly. The soup is fragrant and has an intense taste.

INGREDIENT:

-250 g of pumpkin (one piece)

- ground black pepper - to taste

-3 tablespoons of fermented cream

-1 liter of meat soup or hot water

METHOD OF PREPARATION:

1.Prepare the meat soup: put the washed meat in water and simmer until ready. Don't forget to collect the foam formed on the surface of the future soup. If you already have soup, you can skip this step. If you do not have time to prepare it, replace it with water (we tried both options: they are just as tasty).

2. Pass the carrot through the special grater, which turns it into thin strips or cut it with a knife into short, thin strips.

3.Cut the onion into cubes.

4. Peel a squash, grate it and squeeze the juice. If it is old, remove the seeds as well. Cut it into short, thin strips.

5. Cut the mushrooms into slices. We used Champignon mushrooms, but you can replace them with any others. The soup is even more flavorful if it contains wild mushrooms. But they must be boiled beforehand.

6. We prepared the soup in Multicooker. Pour 2-3 tablespoons of oil into his bowl and add the onion and carrot. Stirring constantly, fry them for 2 minutes.

7.Add the mushrooms and cover the bowl with the Multicooker. Simmer everything for 5-6 minutes, until the mushrooms release their juice. Stir regularly.

8. Add the zucchini and milk. Stir.

9. Add about 1 liter of meat soup, salt, ground black pepper and fermented cream (you can add it at the end of cooking, so that it does not coagulate we used homemade cream and added it at once, because we were sure not to will coagulate).

10. Close the bowl of the Multicooker and cook the soup for 20 minutes, until the vegetables are ready, setting the "Stew" program.

11. Pour the soup into bowls. If you want, you can add boiled meat to it and sprinkle with chopped greens.

Cream of pumpkin squash soup with cream

2 zucchini (approx. 800 gr)
1 large onion
50 gr butter (or margarine)
1 tablespoon natural vegetables
mayonnaise (from a yolk + 1 teaspoon mustard and oil as it contains)
1 small yogurt (200 gr)
dill
salt

Preparation Cold pumpkin soup

  1. Melt the butter and sauté the finely chopped onion until soft.
  2. Cut the zucchini into suitable cubes. Add it over the onion and add just enough water to cover the zucchini. Add vegeta and salt. Be careful, if you use the purchased vegetable, do not add salt. Cook over medium heat until the zucchini is cooked, but not very soft, about 15-20 minutes.
  3. Remove from the heat and drain about half of the water from the pumpkin. Allow to cool completely.
  4. Mix the mayonnaise with the yogurt.
  5. Add the sauce over the pumpkin and mix well. Add chopped dill as much as you want. Season with salt.
  6. Refrigerate and let cool for a few hours. Serve cold with toast.

Stuffed pumpkin soup


Boil a carrot, a parsley, an onion, a little celery. Six young, thinner pumpkins are chosen for the filling, peeled, cut in half and dug inside. Make the filling from 0.500 kg of meat. The remaining bone from the meat is boiled together with the vegetables. The meat is passed through the machine together with the core of a slice of bread soaked and squeezed well, and mix a little rice, picked, washed and flowered (slightly boiled) before, an egg, a small chopped onion, greens and salt. With this chop, fill the zucchini, which is boiled in vegetable soup. If there is still stuffing, make hairs, which are also boiled. Separately boil the borscht, strain it into the pumpkin pot and add the greens, a few finely chopped onion tails and enough salt. Bring to the boil over medium heat. In a bowl, beat the yolk with the cream and mix slowly with the soup.

Zucchini are among the first vegetables to be introduced in the child's diet from the age of 6 months.
